Venison Rossini – medallions of Balmoral red deer in a shallot and port sauce on a crouton with smoked venison pate and served with chive crushed potato and buttered carrots
Chicken breast with pancetta and chestnut stuffing wrapped in puff pastry and served with sautéed winter greens and Marsala gravy
Reblouchon and puy lentil strudel on spiced red cabbage with an apple and calvados sauce
Fillet of sea bass on lobster bisque with hot smoked salmon, fondant potato and crispy leeks
