A lot of our head chef Jamie's inspiration comes from peasant cooking and as such he likes to keep things simple, with a strict adherence to fresh produce and sourcing only the finest quality ingredients and treating them with care. By concentrating almost exclusively on the produce of Scotland's waters, particularly the clean waters of Skye, we strive to maintain an ethical policy in regard to sourcing and sustainability.
